Who we are

Merry Tree is the restaurant at Rath East, Tullow, Co. Carlow, operated by Rathwood - Part of the Evergreen Family (“we”, “us”). We are responsible for the personal data described below. Questions? Email support@rathwood.com or call 059 915 6285.

What we collect, and why

• Booking details — your name, email address, phone number, party size, date and time, and any occasion or notes. We use these to make and manage your reservation, to email your confirmation, and to contact you if something changes. Legal basis: it is necessary to provide the booking you asked for.
• Allergies and dietary needs — if you tell us about these in your notes, we use them only to look after you safely. Legal basis: your consent, which you give by entering them. Please don't include anything you don't want us to know.
• Deposits and payments — when you pay a deposit, our payment provider handles your card details. We never see or store your full card number; we keep only a reference to the payment so we can confirm or refund it. Legal basis: it is necessary to provide the booking you asked for.
• Reminders and review requests — we email a reminder the day before your booking and may email you afterwards with a link to leave a Google review. These are part of looking after your booking.
• Marketing preferences — if you tick the optional box, we may email you news and offers from Merry Tree. Legal basis: your consent. You can withdraw it at any time by replying to any email or contacting us, and it never affects your booking.
• Security records — our servers keep short-term technical logs to keep the site secure and working.

How long we keep it

We keep booking records for up to 12 months after your visit, then delete or anonymise them, unless we need to keep them longer to meet a legal obligation or to deal with a complaint or dispute. Marketing details are kept until you unsubscribe.

Who we share it with

We don't sell your data. We use trusted service providers who process it on our behalf under contract: Supabase (database, hosted in the EU), Vercel (website hosting), Resend (sending booking emails) and our payment provider (taking and refunding deposits). Some of these providers may process data outside the EU; where they do, they rely on approved safeguards such as the EU Standard Contractual Clauses. We may also share information if the law requires it.

Your rights

You can ask us to access, correct or delete your data, restrict or object to how we use it, withdraw consent, or receive a copy of it. Contact us using the details above. If you're unhappy with how we've handled your data, you can complain to the Data Protection Commission (dataprotection.ie).

If we change this policy we'll update the date at the top of this page.
